Prosecco Pomegranate Cocktail - Perfect For Christmas
Prosecco Pomegranate cocktail is a spin on the famous Bellini cocktail. It refreshing, elegant and bright which makes it a perfect cocktail to serve with appetizers and snacks at the beginning of the party or, just like the classic Bellini, it’s one the top choice for brunches.
Fresh rosemary sprigs for garnishing(optional but adds a festive look)
Instructions
Extract Pomegranate Juice
Cut the top and the bottom of the pomegranate in a way that some seeds start to show up. Score the pomegranate in about 6 sections cutting well through the skin. Break the pomegranate open. Remove the seeds.
Using a potato ricer squeeze the juice from the pomegranate seeds.(Leave some for garnishing).Extracting juice with a potato ricer the easiest way with minimum cleanup. If you prefer, you can pass the seeds through the juicer instead.
Strain the juice to remove any impurities.
You'll need ¼ cup of pomegranate juice per glass or juice from ⅓ cup of pomegranate seeds.Keep pomegranate juice in a small pitcher.
Make The Cocktail
When ready to serve fill ⅓ of a flute glass with pomegranate juice.
Carefully add well chilled Prosecco without letting it overflow. Stir with a bar (tall) spoon to combine pomegranate juice with Prosecco.
Top up with more Prosecco.
Garnishing with fresh sprig of rosemary (see photo below) and a few pomegranate seeds you’ve set aside.
